Introducing our winter warmers

Now that winter is approaching, things are going to change here in the Nourished Essence kitchen! Summer salads are yummy, but we all know the best thing about the colder weather is the hearty soups, stews and curries!

So the first uber off the app (see what we did there!) in our winter warmer series is this gorgeous Green Curry!

We absolutely love Thai food and the flavours! It was probably our #1 takeaway choice before we went changed to a wholefoods lifestyle. So we were super inspired to develop a delicious Green Curry recipe as part of our Winter Warmers series.

You are going to LOVE this curry!

It is absolutely packed with flavour and will definitely leave you feeling warmed up! It tastes like the Thai you get in a restaurant but without the nasty hidden ingredients.  There is something so satisfying about making something from scratch, and our Green Curry paste is no exception! We’ve left out the rice, but you could easily do a cauli-rice or quinoa if you want to pad (thai) out your dish (he he). 

We used chicken in our dish, but we know it would taste just as good with prawns or even as a vegetable curry. The protein choice is yours!

Option to infuse with Essential Oils:

We have also tested this recipe using Essential Oils in place of some of the ingredients – Ginger, Lemongrass and Lime! You can absolutely use the fresh ingredients, but if you don’t have them on hand using the Essential Oils to flavour this curry is a fab option to have! Not only do they add an incredible amount of flavour to your food, they also have so many other health benefits. Essential oils are extracts from plants that have been used throughout history for their medicinal benefits. You can get your hands on the pure, food grade quality oils that we love and use here.

These are the only brand Essential Oils we would recommend adding to your food as they do not have any fillers, pesticides or synthetics – just pure plant magic from mother nature’s best!

Remember you only need a drop of two in your cooking as they are powerful and potent – a little bit goes a long way! They are 50-70 times stronger than the source from which they came so remember less is more!

Ingredients
  1. All the goodness you need to make this delish curry!
Green Curry Paste
  1. 3 Cloves Garlic
  2. 2 Green Chillies
  3. 1 Red Chilli
  4. 2 Lemongrass Stalks (outer leaves removed) OR 2 drops Lemongrass Essential Oil
  5. 3 Shallots (Scallions)
  6. Juice of 1 Lime OR 2-3 drops Lime Essential Oil
  7. 1 Thumb-sized chunk of fresh ginger OR 2 drops Ginger Essential Oil
  8. 1 Thumb-sized chunk of fresh turmeric OR 1 tsp ground turmeric
  9. 6-8 Kaffir Lime Leaves
  10. 1 tbs Coconut Aminos
  11. 1 tbs Coconut Oil
  12. 2 tsp Fish Sauce
  13. 1 tsp Ground Cumin
  14. 1 tsp Ground Coriander
For The Curry
  1. 1 Brown Onion - diced
  2. Chicken Thigh - 500g - cubed
  3. 1 can Coconut Milk 400ml
  4. 1 Small Red Capsicum - diced
  5. 1 Zucchini - diced
  6. Fresh Coriander to serve (optional)
Instructions
  1. Now let's put it all together!
For The Green Curry Paste
  1. Place all the the ingredients in a food processor/strong blender.
  2. Pulse until the mixture forms a paste like consistency.
  3. Use a spatula to scrape down the edges as required.
  4. Set aside
For the Curry
  1. Brown the diced onion until soft.
  2. Add 2 Tablespoons of the Green Curry Paste and stir until fragrant
  3. Add the cubed Chicken thighs, stir until chicken is cooked through
  4. Add the coconut milk
  5. Add in another 2 tablespoons of the green curry paste
  6. Add the diced red capsicum and zucchini
  7. Simmer for 15 minutes, stirring occasionally.
  8. Serve with Fresh Coriander and Cauli Rice
Notes
  1. You can adjust the drops of Essential Oil to taste! If you like it strong - add more and if you prefer milder flavours only add 1 drop of each!
