We have found ourselves buying and eating wayyy too many Paleo Bars of late! They are addictive little bars indeed!

Ok, so we know they’re not the most awful thing in the world to indulge on, but they not the cheapest of bars and they are high in fructose.

So we decided to make our own! Trust us, it’s worth the extra effort of making your own rather than buying them! Here’s why you will love them:

  • This way we can control the level of fructose, add in some extra goodness and take away the temptation to purchase these on the go.
  • We have found that having them at home means we don’t actually eat as many. Go figure!
  • This recipe does not use coconut oil, which means they will last outside the fridge for a few hours without melting! So the bonus here is that you can take them travelling – on a plane, or a hike etc. It’s the perfect snack on the go!
  • They are made in a matter of minutes using your food processor, and then just 30 minutes in the refrigerator to let them set.

This recipe is what we like to call the “base” recipe. Use this recipe as a starting point, but swap and change around the flavour combinations to keep it exciting. We love flavouring our Paleo Energy Bars using Essential Oils too! Not only do they add an incredible amount of flavour to your food, they also have therapeutic benefits. Essential oils are extracts from plants that have been used throughout history for their medicinal benefits. You can get your hands on the pure, therapeutic food grade quality oils that we love and use here.

Here are some of our favourite flavour combos

Choc mint crunch: Add in 2-3 drops Peppermint essential oil and a 1/4 cup cacao nibs

Berry Bliss: Add 1/2 a cup of your favourite berries (goji berries, cranberries, raspberries, strawberries etc)

Lemon and Macadamia: Swap the almonds for macadamias and the cacao for 2-3 drops lemon essential oil

Coconut rough: Add 1/2 cup shredded coconut and 1 tbs cacao nibs

Jaffa: Add in 2-3 drops of Wild orange essential oil

Add in the goodness with superfoods:

You could add protein powder, collagen powder, maca, mesquite, spirulina, matcha… grab your favourite superfood to pop that extra goodness in! The superfoods add a boost of energy and are nutrient-dense!

OHHHH the possibilities are endless. You could add cinnamon, ginger, cardamon, even a choc-chilli! What is your fave flavour combo?

Ingredients
  1. 1/2 cup Pureed Pumpkin
  2. 2 cups Almond Meal or LSA
  3. 2 tbs melted Coconut Oil
  4. 1-2 tbs Honey
  5. 1 tbs Cacao
  6. 1 tsp Cinnamon
  7. 1 tsp 100% Vanilla Extract
  8. Pinch of Pink Himalayan Salt
Instructions
  1. Preheat the oven to 180 degrees and line a tray with baking paper
  2. First, mix all of the dry ingredients together in a large bowl
  3. Add the wet ingredients to the bowl
  4. Gently mix together, this will form a thick batter
  5. Roll the batter into small sized balls
  6. Place the balls onto the baking tray
  7. Using the back of a fork, press down onto the balls to flatten (this will also create a pretty indent!)
  8. Bake for 10-12 minutes or until golden
  9. Allow to cool before eating
  10. Store in the fridge for 3-5 days (if they last that long!)
